Trio of ancient beans with fresh tzatziki and chive oil.

SALTY ROAD TO THE VOLCANO
Glazed shrimp, pineapple mole, and achiote butter with apazote oil. Served with a golden potato terrine.
• Wine pairing: Martín Codax - Albariño
WATERMELON BLOOD
Watermelon jelly cured in miso, red wine and hibiscus flower with a touch of cinnamon.
CORN SUN
Braised beef cheeks on a dark cocoa base, roasted corn tortello and citrus zest.
• Wine pairing: Altos Las Hormigas Reserva - Malbec
CANE FLOWER AND PEACH
Sponge cake soaked in peach syrup and Zacapa rum, almond cream, peach slices and toasted almonds.
• Wine pairing: Chateau Ste. Michelle - Riesling
Our tasting menu is prepared every day, for this reason we close reservations at 3:00 p.m. every day. Please if you want to make a reservation contact us. The tasting menu has a cost of: Q355.00 without wine pairing and Q580.00 with wine pairing. 12% of service will be added to your bill and 15% in groups larger than 10.
