The basic preparation for producing PREMIUM SAKE is by polishing the larger rice grains. The grains are then reduced by at least 30% of its original size. To yield the highest flavors, the proteins, lipids, and minerals that coat the grain are removed. Each additional polishing to the grain will enhance a higher, cleaner, and more refine taste to the sake.
RAKU has selected the finest repertoire of sakes from both the Pure Rice Sake which are labeled with the word “Junmai” and Sake with Brewer’s Alcoh
