There are plenty of warm cinnamon baking spice notes and the sweet scents of vanilla and brown sugar. This is very much a classic bourbon Chicago style.

The mellow aroma starts off with caramel, melted butter, and fresh cut apple at the forefront. Bouts of vanilla and light spicy cinnamon lean in, adding to the aroma’s complexity. It’s a down to earth collection of scents that ever-so-slightly err on the sweeter side.

A gentle sprinkling of oak, cinnamon, clove, and mint, but the flavors really are honey, dill, and anise-centric as one might expect with high-rye rye whiskey. The finish is sweet and bitter with honey, licorice, oak, dark chocolate, and something vegetal like rosemary and mint.
